A simple Pasta Bolognese

Ingredients:
- 15 mL olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 450 g ground beef
- 240 mL red wine
- 1 (400 g) can diced tomatoes
- 120 mL beef stock
- 2.5 mL salt
- 1.25 mL black pepper
- 1.25 mL dried oregano
- 1.25 mL dried thyme
- 1.25 mL dried rosemary
- 1.25 mL dried basil
- 1 bay leaf
- 225 g pasta (such as spaghetti or linguine)
- Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, carrot, and celery and cook until the vegetables are softened, about 5 minutes.
- Add the ground beef to the saucepan and cook until it is browned, about 5 minutes.
- Pour in the red wine and bring to a boil. Cook until the liquid is reduced by half, about 5 minutes.
- Add the diced tomatoes, beef stock, salt, black pepper, oregano, thyme, rosemary, basil, and bay leaf to the saucepan. Stir to combine. Reduce the heat to low and let the sauce simmer for 30 minutes.
- Meanwhile, cook the pasta in a large pot of boiling salted water until it is al dente, about 8 minutes. Drain the pasta and transfer it to a serving dish.
- Discard the bay leaf from the sauce and pour the sauce over the pasta. Serve the pasta Bolognese immediately, garnished with grated Parmesan cheese if desired.
